Still winter? Yes, and?

It seems like winter will be still with us for a while!

Myself I personally need something delicious and satisfying now and then – especially when temperatures drop like this.

Something really indulgent. Something like … Raw coconut balls à la Raffaello

This recipe is one of my favourites, very easy and it is gluten-free, dairy free and ‘crap’-free unlike the conventional product.

What do we need:

  • finely crushed coconut - 1 and 1/2 cup

  • coconut oil (solid state) - 3 large spoons

  • raw honey - 1/4 cup (! diabetics will need to put only very little amount or replace it with ½ tsp. organic stevia. Keep an eye on the blood sugar!)

  • vanilla pod - ½ (can be replaced by shop-bought vanilla extract if you don’t have any)

  • whole almonds - about 18 pieces (ideally pre-soaked overnight for easier digestibility and enzymes)

  • a pinch of Himalayan salt

Mix the coconut, honey, oil and a pinch of salt in a bowl. Then cut vanilla pod to half. Carefully cut this half with a sharp knife, open and carefully scrape out the seeds. Add the seeds to the mixture.

Mix thoroughly all the ingredients, paying attention mainly to vanilla seeds to be properly incorporated into the mass. Let it sit in the fridge for half an hour.

Then create small piles and add an almond to each of them. Then create kind of pre-rounds because it does not matter in this phase.

Prepare a box or small bowl with some more crushed coconut which you will need to wrap the balls in.

Put a little coconut oil in your palm and start forming little balls. Oil helps to form beautifully round ones, but mainly stays on the surface, allowing the balls to get perfectly wrapped up in a coconut coating. Now just immerse the balls in the spare crushed coconut.

The sweet treat is ready! 😊 so now just enjoy it with the warming drink like chai latte or dandelion coffee, yum!
